At the International Food Blogger Conference in New Orleans I met a lovely woman named Susie from Brazil and she shared one of here favorite cool weather breakfast ideas with me. I took her inspiration and created this with what I had in the house today.
1.5 cups cooked quinoa
1/4 cup unsweetened almond mylk (more if you want yours a little more wet)
Sliced fruit or berries of your choice (I diced 1/4 of an organic apple)
Liberal shake of cinnamon (depending on your desired taste)
I put the quinoa in a medium saucepan and tossed quickly to heat. I added the almond mylk and a solid shake or two of cinnamon and continued to stir until heated through. I quickly added the sliced apples and turned it out into a bowl. I drizzled honey and gave another quick shake of cinnamon on top for effect. Mix and eat.
The possibilities with this are endless. Cacao, nuts, seeds, berries…….Play with your food. Have fun.
